Use a box grater to grate the cold butter into a small bowl or plate and place in the freezer. In a large bowl, whisk flour, baking powder, salt, and baking soda until well combined. Add grated butter and buttermilk. Stir until combined. Do not overmix. Transfer dough to a lightly floured surface. Pat out into a rectangle and fold in half, repeat this four times. Roll dough until about ¾" thick and gently cut into squares. Cut into 16 biscuits and place on a prepared baking sheet, spacing biscuits about 1 inch apart. Place the baking sheet in the freezer for 10 min to rechill dough before baking. Transfer baking sheet directly from the freezer to oven and bake biscuits between10 – 12 minutes until golden and fluffy. Butter the top of biscuits as soon as they come out of the oven and enjoy! Whether you smother them in gravy or jam, these buttermilk biscuits are a show stopper when it comes to home-baked treats! If you prefer, you can also roll these out and cut them with a biscuit cutter.
