Asparagus Stuffed Chicken Breast

  • 4 boneless, skinless chicken breasts
  • 2 cups shredded cheddar cheese
  • 1 to 2 pounds asparagus
  • Salt, pepper, garlic to taste


Preheat oven to 375. Pound out chicken breasts. Take 4 or 5 pieces of asparagus and ¼ cup of cheddar cheese and place in the middle of the chicken breast. Wrap the chicken around the stuffing. Place in pan and season tops to preference. Bake in the oven until chicken is cooked and juices run clear. Place another ¼ cup of cheese on top and place back in the oven to melt.

This is one of our favorite dinners! Our kids love asparagus, I usually have to roast an extra pan of asparagus to go with this for dinner. This is a pretty quick and easy dinner to make, whether you're cooking for two or a whole family.
