Zucchini Bread

  • 3 cups flour
  • 1 tsp salt
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 Tbsp cinnamon
  • 3 eggs
  • 1 cup vegetable oil
  • 2.5 cups sugar
  • 3 tsp vanilla
  • 2 cups zucchini
  • 1 cup chocolate chips


Preheat oven to 325. Grease and flour two 8 x 4-inch pans. Mix the flour, salt, baking powder, baking soda, and cinnamon together in a bowl.

In a separate large bowl, beat the eggs, oil, vanilla, and sugar together. Add the dry and sifted ingredients to the creamed mixture and beat well. Stir in the zucchini and chocolate chips until they're well-combined. Pour batter into prepared pans.

Bake for 40 to 60 minutes, or until a tester inserted into the center of the bread comes out clean. Cool in the pan on a rack for 20 minutes. Remove the bread from the pan and completely cool.

This is really the only reason I even grow zucchini in our garden. I shred and freeze it in the fall so that I have zucchini to make bread all year long! I almost always add chocolate chips to our zucchini bread, and it wasn’t until my kids got older and wanted to know what the green was inside their bread and figured out it wasn’t chocolate chip bread. Still to this day, this is one of their favorite breads that I bake, and they all stand and wait for it to come out of the oven so they can have a warm piece as soon as I can slice it.
