Mac n cheese

Macaroni and Cheese

Ingredients

  • 16 oz box or bag of macaroni noodles
  • 1 stick butter (1/2 cup)
  • 3/4 cup flour
  • 2 cups milk
  • 2 to 4 cups of shredded cheese (cheddar, American, Swiss or any combination)
  • Garlic powder, salt, and pepper to taste

Instructions

In a large pot of water boil noodles to desired doneness, drain, and reserve. In the bottom of pot melt butter and add seasonings. Stir in flour to make a roux (this should be toothpaste consistency). Stirring constantly cook for 2 minutes until the roux is bubbling. Slowly stir in milk. Once milk comes to a boil stir in the cheese. I like to use a mix of sharp cheddar, American, and just a little Swiss to add some depth. Once cheese sauce is complete, add cooked noodles and stir. Let sit for 5 minutes so the noodles can absorb the cheese sauce.


This, of course, is one of the kids' favorite meals! We love to add cooked and chopped bacon or ground beef to complete this meal! It is also great by itself! Homemade mac and cheese is one of the first things I like to teach the kids to cook!
