Huckleberry muffin

Huckleberry Muffins

Ingredients

  • 3 cups flour
  • 1.5 cups sugar
  • 4 tsps baking powder
  • 1 tsp salt
  • 2 eggs
  • 1 tsp vanilla
  • 2/3 cup vegetable oil
  • 2/3 cup mil
  • 2 cups of huckleberries (fresh or frozen)
  • 2 tsps cinnamon
  • 3/4 cup sugar

Instructions

Combine the flour, sugar, baking powder, and salt. Add the egg, vanilla, oil, and milk. Drop in the huckleberries, then mix and pour the batter into the cups of a greased muffin tin. Sprinkle tops with cinnamon and sugar mixture and bake at 400ºF for about 20 minutes.


Our kids love it when it’s huckleberry season! Picking berries is one of their favorite summertime activities! I am not convinced they are as good as pickers as they are huckleberry eaters! These muffins are a favorite breakfast item all year round. Anyone will surely be pleased with this delish treat! If you are out of huckleberries you can substitute blueberries! Enjoy!
