Healthy Blueberry Popsicles

Cook Time: 4 to 6 hours freeze time


Ingredients

  • 3 cups Blueberries fresh or frozen
  • 1 cup Plain Greek Yogurt
  • 1 Tbsp Lime Juice
  • 2 Tbsp honey
  • 1 tsp Vanilla Extract

Instructions

Add blueberries, yogurt, lime juice, honey, and vanilla to a blender

Pulse and mix ingredients together until the popsicle mixture is smooth.

Divide blueberry mixture evenly among popsicle molds; put lids in place, and freeze 4-6 hours (preferably overnight).

To remove popsicles from molds, place under running water for a few seconds, then twist popsicle to remove.


Making the kids fresh fruit bars like these make them feel like they're eating a dessert, even though they're actually a healthy treat. It's a win-win! These are fun to make with the kids, especially when you let them try out different fruit combinations.
