Garden Chicken Salad

  • 8 cups mixed lettuces (romaine, iceberg, and loose leaf all work)
  • 1 large cucumber, sliced and quartered
  • 1 large tomato diced
  • 4-6 mini sweet peppers diced
  • 2 cups shredded chicken (or chopped-up chicken strips)
  • Dressing of your choice


Ensure all your ingredients are chopped into bite-sized pieces, then toss them all together in a large bowl.

Salad can be served right away or stored in an airtight container in the fridge for one day. Toss with your favorite dressing right before serving.

Harvesting out of your garden? Most of these ingredients can be grown in our area! If not, you can pick them up at Kalispel Market! We love to purchase chicken strips and slice them to top the salad! You also could wrap all of this in a tortilla for a delicious veggie chicken wrap! This is another great option for meal prepping, easy to make on Sunday evening and have healthy lunch options for all week!
