Coconut or Banana Cream Pie Written By: Shantel Whitford Prep Time: 10 minutes Cook Time: 15 minutes (then chill for 1 hour) Print Recipe Ingredients 3/4 cup sugar 1/3 cup flour 1/4 tsp salt 2 cups milk 3 egg yolks beaten 2 Tbsp butter 1 1/4 tsp vanilla 2 cups coconut flakes or 4 bananas sliced 1 9-inch pie crust (regular, graham cracker or chocolate Orea crust) Cool Whip Vanilla wafers Instructions Preheat oven to 350. In a pan on medium heat cook the sugar, flour, salt, and milk until it's bubbly, then cook two more minutes after it bubbles, but not at a full boil. Slowly add a small amount of this warm mixture to the egg yolks while stirring them to temper in the egg yolks. (This is important so that you don’t add the cold yolks directly to the hot mixture, which would end up making the eggs scrambled!) Now add the warm egg mixture to the pan and cook 2 more minutes while stirring the whole time. Remove from heat and stir in the butter and vanilla until the butter melts and the mixture is smooth. Next, you'll add either the coconut or the bananas, depending on which flavor you've chosen. I usually add bananas to the bottom of the pie crust and pour the pudding over them. Bake in the oven at 350 for 12-15 minutes and then cool and chill for an hour. After the pie cools, top it off with Cool Whip, vanilla wafers, or coconut flakes! I love this simple cream pie base because you can do so many different things with it! Coconut cream pie with a chocolate Oreo crust is one of my favorites, that's for sure! We love cream pie in our house, and there is no wrong way to top a cream pie! From banana to coconut and even peanut butter, we have not met a cream pie yet that we didn’t love!
