Prep Time: 15 minutes

Cook Time: 55 minutes

  • 1/2 cup butter, softened
  • 1 cup granulated sugar
  • 2 eggs, beaten
  • 3 - 4 bananas, smashed
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp vanilla (optional)
  • 1 cup of walnuts, chocolate chips, or peanut butter chips (optional or for variation)

Preheat oven to 350º. Cream together butter and sugar. Add eggs and crushed bananas. Combine well. Sift together flour, soda, and salt. Add this to creamed mixture. Add vanilla (optional). Mix just until combined, and be careful not to overmix. Pour batter into greased and floured loaf pan. Bake at 350º for 55 minutes until a toothpick that's inserted into the middle of the loaf comes out clean.

Do you like your banana bread plain or with butter? Our favorite is of course with butter! I love to bake fresh banana bread on Saturday afternoon and then slice it and make French toast on Sunday morning for breakfast! We also love to add chocolate chips. Banana bread is such a favorite quick and easy treat! You can dress it up or eat it plain. The end-piece is my favorite, hot out of the oven, and smothered in melted butter! Sometimes I think my kids avoid the bananas on the counter just so we have some left to make banana bread! It is a household favorite for sure!
